Nanaimo Bar

If you were to head down South past the US/CAN border, you'd have a hard time finding someone who keeps a can of Bird's custard in their pantry, let alone anyone who's ever heard of our beloved Nanaimo bars. 

Well that's ok, we're happy to keep these bite sized squares of Canadian history, culture and craving all to ourselves, amiright? ;)

This is the quintessential Nanaimo bar - chocolate coconut base, custard buttercream and a thick chocolate coating top. No twists, no tweaks, just the all original classic the way it was meant to be.

INGREDIENTS:

Base: Cocoa powder, sugar, vanilla, cookie crumbs (Bunner’s all purpose flour blend (chickpea flour, sorghum flour, fava bean flour, potato starch, tapioca starch), sugar, salt, xanthan gum, baking soda, baking powder, cane syrup, canola oil, molasses, vanilla), shredded coconut, dairy free butter (canola oil, water, palm oil, salt, vegetable monoglycerides, sunflower lecithin, citric acid, natural flavours, annatto, turmeric, vitamin A, vitamin D2). Custard Filling: dairy free butter (as above), dairy free whipped cream (water, hydrogenated palm oil, sugar, sorbitol syrup, hydroxypropyl methyl cellulose, carboxy methyl cellulose, carrageenan, tara gum, gellan gum, polysorbate 60, sorbitan monostearate, mono-and diacetyl tartaric acid esters of mono-and diglycerides of fatty acids, sodium stearoyl-2-lactylate, soy lecithin, flavouring, trisodium citrate, disodium phosphate, salt, colour), custard powder (cornstarch, salt, colour, artificial flavour), icing sugar, salt. Chocolate Ganache: coconut cream (coconut milk, water, guar gum, polysorbate 60, sodium metabisulphite), vegan chocolate chips (sugar, unsweetened chocolate, cocoa butter, soy lecithin, vanilla).
