Two layers of spicy carrot cake, infused with pumpkin seeds and raisins, sandwiching a delicious maple cream cheese frosting center, topped with toasted coconut shreds!
WARNING: Contains raisins (for you weirdos that don't like raisins)
Ingredients:
Cake: Bunner’s all purpose flour blend (chickpea flour, sorghum flour, fava bean flour, potato starch, tapioca starch), baking powder, xanthan gum, salt, cinnamon, ginger, nutmeg, dairy free butter (canola oil, water, palm oil, salt, vegetable monoglycerides, sunflower lecithin, citric acid, natural flavours, annatto, turmeric, vitamin A, vitamin D2), sugar, apple sauce, vanilla, sunflower lecithin, coconut cream (coconut milk, water, guar gum, polysorbate 60, sodium metabisulphite), water, apple cider vinegar, toasted coconut, shredded carrot, raisins, pumpkin seeds. Frosting: Powdered sugar, shortening (canola oil, palm oil, mono and diglycerides), coconut milk(as above), salt, vanilla, maple flavour, shredded coconut. Topping: Toasted shredded coconut.
